清蒸桂花鱼
1、鱼杀好洗净,血要放干净,鱼肚黑膜要除干净。 2、用少量盐,料酒(可以不要),加点姜沫也可,涂抹鱼身稍腌渍,记住鱼腹腔也要抹到,用一丁点油涂匀鱼身,将姜片置入鱼腹腔,置于碟上,多余的水滤掉。 3、在第二步的同时用大火烧水,水开后,放入鱼碟隔水中大火蒸十至十五分钟。 4、关火虚蒸五分钟左右。 5、取出鱼,倒掉碟里蒸出来的汁水,鱼身上均匀摆上切得很细的葱丝、姜丝,香菜摆于鱼两侧。 6、烧热油适量,加入蒸鱼豉油,均匀淋于鱼身上,热油的温度马上把姜葱的香气逼出来了,再滴入数滴美极鲜味汁,一碟色香味俱全的清蒸黄花鱼就可以上桌了。

主料:桂花鱼八两至一斤。
调料:植物油一两,香葱适量,姜适量,香菜适量,盐少许,“汾阳桥”牌蒸鱼豉油、味极鲜少许。
做法:
